Fresh strawberries straight from the fields...it sure doesn't get any better than that!
If you are fortunate to live in an area that grows strawberries then you know what I mean.
This time of year they are on the menu morning, noon and night!
Here is my favorite strawberry pie recipe that is sure to please.
Fresh Strawberry Pie
2 quarts strawberries
baked pie shell
1 c. sugar
4 T. cornstarch
1/2 c. water
Blend 2 c. berries. In a saucepan, add blended strawberries and sugar. Cook until bubbling. Add the cornstarch that has been dissolved in the water. Cook 2 to 3 minutes until thick. Cool.
Spread a thin layer of the sauce on the bottom of the baked pie shell. Fill the pie shell with a layer of berries, add a layer of sauce, add remaining berries and the final layer of sauce. Chill.
This is best chilled overnight or at least 6 hours. It will be tall and heaping with berries. It's best eaten within 3 days because the crust will become soggy. But, that usually isn't a problem!
